In short, the answer for me is yes. That is also accompanied by a HEAVY learning sigh. I composted a LOT of ferments the other day. It was my own fault. As I flew through last growing season not expecting the amount of veggies I was lucky enough to grow… I used a FAST technique. Fermenting.
Our family loves the flavor and we DID eat plenty but it does have a shelf life and I just made WAY too much. Canning is much more time consuming – I told myself. This will preserve plenty and next year (this year) I will can.
Well THATS for sure. I am certainly canning most of our harvest this year!
