Looking for a quick but tasty way to create a make ahead breakfast? Look no more! You have found it. Cranberry Oatmeal Breakfast Bake is here to save the day. Or at least morning.

My friend Cerina came by the other day to help me whip up this easy recipe. Perfect to make the night before a big holiday, this recipe is a simple as a dump cake without the guilt.
Making it the night before is a must but also the ingenious part of this recipe. Merely, pop in the oven the next morning and let your friends and family wake up to heavenly smells. They will think you woke up early just to treat them. Shhhh… Don’t tell them you didn’t!

An Easy Tasty Way to Serve A Hearty Breakfast to Family and Friends!
- 2 each eggs
- 1 cup milk
- 1/4 cup heavy cream
- 2 tsp vanilla extract
- 1/4 tsp almond extract
- 1 tsp apple pie spice
- 1/4 tsp salt
- 1/2 cup brown sugar: firmly packed
- 5 tbsp butter; melted
- 2 cups crisp apple like Honey Crisp or Granny Smith; peeled and chopped
- 3 cups uncooked old fashioned rolled oats
- 1/2 cup pecans or your favorite nut; coarse chop
- 1 cup dried cranberries
- 1/4 cup brown sugar; firmly packed
- 3 tbsp butter; melted
- 1/2 cup uncooked old fashioned rolled oats
- 1/2 cup pecan or your favorite nut; coarse chop

Grease an 8" (2 quart) baking dish. Whisk together: eggs, milk, cream, vanilla & almond extracts, apple spice, salt, 1/2 cup brown sugar and 5 tablespoons of butter in a bowl.

Add apples, 3 cups of oats, 1/2 cup nuts and 1 cup cranberries. Stir thoroughly.

Then prepare your topping. Using a bowl dump the 1/4 cup brown sugar, 3 tablespoons melted butter, 1/2 cup oats and 1/2 cup nuts into it and give a stir.
Cover both baking dish and bowl and place in fridge overnight.

In the morning, take both out of the fridge. Preheat oven to 350° and stir the apple oatmeal mixture in the baking dish. Sprinkle the top with the topping mix. Cook for about 35 minutes.

Sprinkle remaining 1/2 cup of cranberries over the dish once it's out of the oven.
