This is a simple and age old way to keep eggs when:
1) You have too many to eat.
2) Your production goes down in the winter.
3) Power goes out and there’s no refrigeration.
With just two ingredients, you can keep your eggs viable for up to 18 months! What are those ingredients? Filtered water and pickling lime. Yup! That’s it!
This is the first year we have had an abundance of eggs so this is a new process to our farm. Everything I have read has said to use FRESH eggs. You know, the ones you collected that day. I can see why this would be important but I’m running a second batch to test eggs that are up to 4 days old. Just curious if there will be any fails in that batch.
