Ok, that last one is supposed to be a derogatory remark but maybe I am a pudding head. Don’t get me wrong. The powder out of the package is ok… for someone else.

See, I was ruined raised by my Grams who made everything from scratch. She let me help make the pudding (from scratch ‘natch) and after all that whisking ~ I won the prize! I got to lick BOTH the whisk and wooden spoon.
Extra points to Mom and Dad for having only one child! All delicious utensil licking did NOT have to be divided in my house! I won the spoils. I get great pleasure out of seeing our granddaughter now the proud whisk or wooden spoon licker. The scepter has been handed down to the new Queen of Yummy Utensil Licking.

So it almost goes without saying that homemade pudding is the way we roll on this farm. I want to pass the pudding scepter to you so I played with some ideas and am excited to to share this recipe!

It’s SO super easy to make. It’s as if you spent all that time whisking, but ya didn’t. Shhhhh!
Spoil yourself with this easy INSTANT POT Vanilla Pudding. Yup, I said it. INSTANT POT! So creamy and delicious, a must make!
- 3/4 cup organic sugar
- 2 cups milk or half and half
- 2 each eggs whisked
- 1 each egg yolk only
- 3 tbsp milk or half and half
- 3 tbsp non gmo corn starch
- 3 tbsp butter cubed ~1.5 tbsp if you use half and half
- 1 quarter vanilla bean sliced open
- 1/8 tsp salt
- 1 tsp vanilla extract or play and use 1/2tsp vanilla & 1/2 tsp almond

Chill your Instant Pot insert in the fridge or freezer until it's nice and cold.

Remove the insert from the fridge. Using a small spray bottle squirt a fine mist of water into your insert. Or just use your fingers to flick water into the insert. The point is to add some water but not tons of it.

Using a large bowl whisk together: milk, eggs, egg yolk, sugar and salt. If you are using a vanilla bean, pop into the liquid now.

Pour into the Instant Pot insert and cover with a silicone lid or glass lid or standard lid. You will not be pressure cooking so you don't have to seal the lid.

Select *Yogurt setting and press repeatedly to select MORE.

While your pudding is cooking: Using a small bowl, whisk together your cornstarch and milk.

Your pot will beep and "Yogt" will display when it's finished. Select Saute Less (by pushing the Saute button until it reads less) remove your lid and whisk in your cornstarch/milk mixture.

Keep whisking for about 3-4 minutes as the pudding begins to thicken up. Once it starts to simmer or bubble shut off your Instant Pot and remove the insert (set on a heat safe surface).

Whisk in your cubed butter and once incorporated pour the pudding through a strainer, into another bowl, to get out any lumps. If you are using vanilla extract, this would be the time to add it.

Place a piece of parchment paper over the bowl and seal with a lid. Place in your fridge to cool.

Your pudding should keep about one week.

Use the KEEP WARM setting for 15 minutes.

When do you put the vanilla in?
Oh my goodness! I was a real pudding head wasn’t I? It was mentioned in the video but I neglected to put it into the recipe notes. Please add your vanilla in in this way:
If you are using a bean: scrape and add as your are whisking the ingredients listed in step 3.
If you are using extract add the vanilla during step 9 when you add the butter.
So sorry for this and I will edit the recipe. Thank you for bringing it to my attention and I hope you enjoy your pudding!
